Holy Gaw is a rarity in Hong Kong in that it may be the only restaurant serving Filipino fusion food. The menu is a tribute to chef Marvin Gaw's Filipino heritage, while mixing in influences from his time working in Western kitchens. Located on Swatow Street in Wan Chai, Holy Gaw leans on strong Filipino flavours in their Beef Tenderloin, Spicy Chicken and Cirspy Pork dihes, all served atop a plate of Cauliflower Rice. Conversely, Western dishes that use Filipino ingredients include Gaw's Carbonara and Ube Ice Cream Sandwich.
